Allow to purchase max 1 item from defined category

if you mean that you want to allow to purchase only defined number of items from selected category, the module cart conditions pro will do the job.

For example, you can set there condition like: (in context of your question)

- allow to purchase max. 2 items from category A

- allow to purchase min. 2 items from category B

- allow to purchase max. 1 item from category C and rule will be applicable only for defined groups of customers (for example "guest")

- allow to purchase min. 1 item from category D and rule will be applicable only for defined groups of customers (for example "guest")
